Unter der gro\u00dfen Vielfalt von Fleischprodukten als Wurstwaren umfasst die Familie der gep\u00f6kelten Kochschinken die gr\u00f6\u00dfte Anzahl von Varianten. Es handelt sich um angeteigte Produkte und Wurstwaren in nat\u00fcrlichen oder k\u00fcnstlichen Eingeweiden, die einem Reifungsprozess unterzogen werden. Die Bezeichnung gep\u00f6kelt bedeutet das Hinzuf\u00fcgen von P\u00f6kelstoffen. <\/span><\/p>\n

FIXIERUNG VON PFEFFER, FEINEN KR\u00c4UTERN UND GEW\u00dcRZEN<\/b><\/span><\/p>\n

Unter den Anwendungen der Beschichtungen f\u00fcr die Fleischbranche hebt sich die Nutzung dieser Beschichtung als Fixierungsstoffe f\u00fcr Pfeffer, Gew\u00fcrze und feine Kr\u00e4uter hervor. Es handelt sich um eine sehr wichtige Anwendung, wobei sich die formulierten Beschichtungen von CONCENTROL seit vielen Jahren hervorheben. Aktuell erfolgt diese Anwendung mit essbaren Beschichtungen, damit diese zusammen mit den Wurstwaren und mit dem Pfeffer und den feinen Gew\u00fcrzen gegessen werden k\u00f6nnen. <\/span><\/p>\n

Es gibt zwei Arten von Beschichtungen, diejenigen, die als Klebstoffe wirken und diejenigen wie die Fixierer von Gew\u00fcrzen und Pfeffer auf gep\u00f6kelten Wurstwaren. Ihre Anwendung ist sowohl f\u00fcr k\u00fcnstliche Eingeweide als auch f\u00fcr nat\u00fcrliche Eingeweide geeignet, und in manchen F\u00e4llen direkt auf das Fleisch, sobald der Darm entfernt wurde. Sie bieten eine nat\u00fcrliche Oberfl\u00e4chenbehandlung, regulieren den Reifungsprozess der Wurstwaren und bieten Schutz vor ungew\u00fcnschtem Wachstum von Schimmel und Hefen.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n

EXTERNE SCHUTZBEHANDLUNG<\/b><\/span><\/p>\n

Aktuell werden die rohen gep\u00f6kelten Wurstwaren aufgrund ihres Aussehens, Textur und Geruchs gesch\u00e4tzt. Eines der m\u00f6glichen Probleme mit dem Aussehen ist, dass das ungew\u00fcnschte Wachstum von Pilz auf ihrer Oberfl\u00e4che vorliegen kann.<\/p>\n

Als vorbeugende Ma\u00dfnahme verf\u00fcgt CONCENTROL<\/strong> \u00fcber nat\u00fcrliche, essbare Beschichtungen, die auf nat\u00fcrlichem Eingeweide aufgetragen werden k\u00f6nnen, sowie Kunststoffbeschichtungen wie VIPLAST-1200 Q<\/strong>, die auf k\u00fcnstliches Eingeweide aufgetragen werden k\u00f6nnen. Diese Beschichtungen werden durch Eintauchen aufgetragen, bieten Schutz vor Schimmel und Hefen, vermeiden das L\u00f6sen der Beschichtung der Wurstwaren und bieten dem St\u00fcck ein nat\u00fcrliches Aussehen.<\/p>\n

SCHIMMEL SIMULIERENDE BEHANDLUNG<\/b><\/span><\/p>\n

Um eine wei\u00dfe, irregul\u00e4re Oberfl\u00e4chenbehandlung bei Wurstwaren zu verleihen, die dem nat\u00fcrlichen Wachstum von wei\u00dfem Penicillium entspricht, verf\u00fcgt CONCENTROL<\/strong> \u00fcber eine nat\u00fcrliche, essbare Beschichtung VIPLAST W-171 SF-05 RF<\/strong>. Aktuell wird der gep\u00f6kelte Schinken als ganzes St\u00fccke mit Knochen oder ganze St\u00fccke oder Schinkenmittelst\u00fccke ohne Knochen verkauft. Eines der wichtigsten Ziele bei der Herstellung von gep\u00f6keltem Schinken ist das Ergebnis eines Produktes mit maximaler sensorischer Qualit\u00e4t. In dieser Hinsicht hat CONCENTROL<\/strong> eine Vielfalt von nat\u00fcrlichen, essbaren Beschichtungen VIPLAST C-900 ACG<\/strong> zur externen Behandlung von Schinken ohne Knochen entwickelt, die die folgenden Eigenschaften aufweisen:<\/span><\/span><\/p>\n
