Fresh cheese, also known as white cheese, is soft cheese that is characterized by retaining a large part of milk whey and not having an aging or processing process. This cheese, which can be found in any supermarket, is usually offered in a wavy cup format.

The main challenge in the manufacture of this product is its demoulding from the container at the time of consumption. For this reason, Concentrol has developed the PROTILAT DQ-2 solution; a water-based release agent based on an emulsion of vegetable oils and food-grade additives. This lubricating emulsion is an excellent demoulding solution when extracting pieces of fresh cheese.

In addition to being used to release cheese from its plastic packaging easily and without breaking independently of its date of manufacture, PROTILAT DQ-2 does not alter the organoleptic properties of the treated product. Other notable features of PROTILAT DQ-2 are its biodegradability and its residue, easy to clean with water.

Its formulation allows the product to be applied without needing previous processes: the PROTILAT DQ-2 solution comes ready for use. Offered in 25, 50, 200 and 1,000-litre containers, its shelf life is up to six months in a closed container and stored in a cool place.

The application of the product is recommended in small dosages, very effective in small quantity sprays inside each container before the introduction of fresh cheese. Its appearance, white liquid, does not stand out against the product.

It is also important to note that all the components included in the formulation of PROTILAT DQ-2 are within the positive list of foods allowed by the European Union legislation for the food sector.
