Concentrol offers a series of products for the external treatment of cold meat whose objective is to improve the conservation and preservation of the pieces. These solutions regulate the aging process of cold meat, offering protection against moulds and yeasts. Within the VIPLAST range, there are products designed for specific products.
Cured ham is marketed in the form of whole pieces with bone, whole pieces or boneless ham centres. One of the fundamental objectives in the production of cured ham is to obtain a product of maximum sensory quality. In this sense, Concentrol has developed a range of edible natural coatings, VIPLAST C-900 ACG, for the external treatment of boneless ham.
VIPLAST C-900
These coatings are formulated from aqueous emulsions of E-472a (acetic esters of mono and diglycerides of fatty acids) and other food additives belonging to Group I according to regulation (EU) No 1129/2011.
The coating allows optimal regulation of the curing process of the ham and prevents the formation of a white veil.
White veil
The origin of the white veil is found in tyrosine. Tyrosine is one of the 20 amino acids that make up proteins. This tends to precipitate on the surface in pieces or cuts of ham a few days after being vacuum packed, and can also appear in hams left a few days without being sliced. Its formation begins first in the most humid muscles and then spreads to the rest of the surface.
This formation does not entail any danger to health, but it significantly modifies the appearance of the product. This can negatively impact the perception of the consumer, since it can be interpreted as mould or a product in poor condition. For this reason, it is interesting for producers to find ways to avoid the formation of a white veil on the pieces of ham, keeping the quality and flavour of the product unchanged.
It can be applied by dipping, spraying or painting on the product. The coating forms an innocuous layer with a natural finish on the surface of the product. Said layer does not penetrate inside the piece nor does it give it an odour or taste.
