One of the main applications of antifoams in the food industry is vegetable processing. The vegetable processing and treatment chain includes manufacturing processes such as washing, peeling, and blanching vegetables, where foam formation is a very common issue.

Why is foam generated in these processes?

Vegetables release surface-active substances, such as starches or proteins, which accumulate in the system’s recirculation water and generate foam. Common vegetables such as peas, chickpeas, and spinach tend to have a higher propensity to generate foam.

Which is the best antifoam solution to prevent this foam generation?

For this type of application, we recommend the use of the antifoam EMULTROL® DV-15 FG, a food-grade silicone-based antifoam (E-900), with the following key features:

  • Maintains good stability and dispersibility.
  • Highly effective at low dosages.
  • Does not affect the smell, taste, or appearance of vegetables, provided it is used correctly and in the quantities indicated by technical support.

As EMULTROL® DV-15 FG is composed of food-grade silicone, it may be used, in accordance with Regulation (EC) No 1333/2008 of the European Parliament and of the Council of 16 December 2008, as a food additive, as a processing aid, or even as a direct or indirect food contact additive, depending on the application and the legislation of the country or community region concerned.
