PROTILAT: Natural coatings for cured meats
The PROTILAT range is born from a formulation based on milk proteins to act as an adhesive and binder for spices on natural and artificial casings of different calibers. Our solutions allow for uniform adhesion of pepper, aromatic herbs, and other seasonings, ensuring an attractive and completely natural finish.
In addition to improving presentation, PROTILAT offers protection against unwanted mold and yeast growth, regulates the maturation process, and ensures a homogeneous curing. The result is a sausage with great added value: 100% edible, with a traditional finish, and aligned with consumer demands.

VIPLAST C-900 ACG: The solution to the “white veil” in ham
In cured hams, sales are not limited to maturation but also depend on maintaining a flawless appearance. The “white veil,” caused by the crystallization of tyrosine, may appear on the surface of vacuum-packed pieces or those exposed for several days. Although it poses no health risk, it does raise doubts among consumers, who often mistake it for mold or product spoilage.
To provide a solution, Concentrol has developed VIPLAST C-900 ACG, a natural and edible coating made from aqueous emulsions of E-472a and other food additives authorized under European regulations. Its application creates a thin, stable, and safe layer that does not penetrate the interior of the ham nor alter its taste or aroma.
