Concentrol innovates with chemistry to add value and guarantee the present and future well-being of society. From one of its divisions, Food Processing Aids, various solutions are offered for the food industry focused on the conservation, protection, processing and finishing of products.

One of the sectors in which these Concentrol solutions are applied is the production of cheeses. Thanks to its experience in the design and production of chemical solutions, the company develops surface treatments to guarantee optimal packaging and transport, as well as auxiliary products related to food safety and hygiene.

The manufacture of cheese consists of different stages, being the maturation phase where Concentrol can contribute its knowledge, proposals and solutions. In the first part of this article, we discussed the specifics of the cheese making process and the properties of its coatings.

In order to guarantee added value to cheese production, Concentrol offers different solutions for the cheese sector, which are organized into different ranges according to their objectives: coatings, antifoam agents and other auxiliary products.

 

Coatings

The Concentrol range designed exclusively for cheese coatings includes the most products dedicated to this sector. The VIPLAST® range includes all coatings for the external treatment of cheeses, contributing to improving its appearance during the maturation, storage and sale process.

These surface treatments do not affect the interior of the cheeses, nor do they alter their original flavor. Among its characteristics, the fact that it regulates and favors the healing and ripening process stands out, and with the addition of authorized preservatives, it offers fungicidal protection against molds and yeasts. With its use, professionals in the sector manage to avoid superficial cracking, dehydration and improve the final appearance of the cheese. At Concentrol we have an extensive catalog of coating colors, with glossy, satin or matt finishes, adapted to all application systems.

The VIPLAST range for the cheese sector includes everything from plastic to edible coatings, based on formulations of food additives such as fatty acid esters, gums or cellulose.

  • PLASTIC coatings 

These completely non-toxic coatings comply with regulation (EU) No. 10/2011 for direct contact with food, and the German BfR standard, Chapter XIV. They do not penetrate the product and, therefore, regulate the ripening process of the cheese without influencing the smell or taste.

This range is perfectly adjusted to the specific needs required by the processes of cutting and packaging cheese portions, or other characteristics such as the need for rapid drying and adequate resistance to humidity in vacuum packaging.

  •  NATURAL coatings

These products are based on food additives that have the E code, according to EU Regulation No. 1333/2008. They are plant origin formulations and, therefore, are considered edible together with cheese. Among other characteristics, it is worth highlighting the fact that they are easy to clean, have greater natamycin stability and offer in many cases a natural and artisanal appearance, avoiding plastic reflections.

Among these coatings, we highlight the R or R,C that are formulated with gums (E-410 – E-415) and/or cellulose (E-460 – E-466) in aqueous solution. 

 

Antifoam Agents 

The EMULTROL DFM® family of products is specially designed to control the foam produced in different processes in the food industry.

At Concentrol we have a wide range of antifoam products, some of which are Kosher and Halal certified.

 

Other auxiliary products

Concentrol also has products related to food safety and hygiene, such as special cleaners to remove dry remains from plastic coatings, detergents, disinfectants, organic matter descalers, sealants for cold rooms or surface lubricants for conveyor belts.
