Cheese coating plays a very important role in the quality and appearance of the final product. The coatings added to cheese rind allow integrating additives such as preservatives and food colouring, as well as controlling and optimizing the aging process thanks to the protective film it forms.

There are different types of cheese coatings. At Concentrol we have extensive experience in chemical solutions for the food sector and we develop high quality plastic and natural coatings that act before, during and after the aging stage, regulating the loss of moisture and protecting cheese against the unwanted growth of microorganisms such as molds and yeasts. They also protect cheese from physical damage during transport and allow a specific final appearance regarding colour or texture.

However, plastic coatings may leave traces on cheese wedge cuts when the elasticity of the coating is not adequate for the temperature at which the wedge is cut. The coating cracking causes the appearance of unwanted plastic waste on the product, which affects the appearance of cheese.

For this reason, it is important to keep track of the elasticity of the coating when cutting a wedge, since it is a key element for manufacturers of cut cheese wedges.

In order for cheese producers to optimize their production and have absolute control over cheese quality, Concentrol has developed VIPLAST® plastic coatings that serve both as a vehicle for additives and to regulate the cheese aging process. VIPLAST® products are neither absorbed by cheese nor influence its smell or taste.

Concentrol integrates vertically the manufacture of the coating allowing to control with precision its elasticity, its drying speed and its resistance to humidity in vacuum-packed products.

VIPLAST® plastic coatings can be tailored to cheese maker’s requirements taking into account the wedge cutting temperature, and with the option of adding preservative mixtures based on natamycin, sorbates and other food additives that provide protection against molds and yeasts in cheese. It is also possible to choose from a wide catalogue of colours for painting the cheese while allowing a glossy, satin or matte finish as desired. All VIPLAST® plastic coatings are non-toxic and comply with Regulation (EU) No. 10/2011 of direct contact with food and the German standard BfR Chapter XIV, part B.
